Ingredients

  • 1 cup coarsely chopped, unpeeled cucumber
  • 1 tablespoon lemon or lime juice
  • 1/2 cup plain low-fat yogurt
  • 1 teaspoon prepared mustard
  • 4 tablespoons low calorie mayo
  • 1 teaspoon dried onion flakes
  • salt and pepper to taste

Instructions

  1. Use cucumbers which have not been wax coated.
  2. Chop coarsely and leave in a colander for about 30 minutes to drain.
  3. Squeeze out excess moisture from the chopped cucumbers.
  4. Combine the drained cucumbers with lemon or lime juice, yogurt, mustard, low calorie mayo, and dried onion flakes.
  5. Mix well and chill in the refrigerator for a few hours to allow flavors to blend.
