Ingredients

  • 3 cups sifted flour
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 3 cups pecans, chopped
  • 3 teaspoons baking powder
  • 1 cup margarine
  • 4 eggs
  • 1 cup milk
  • 1 cup raisins (optional)

Instructions

  1. Beat eggs; add milk, sugar, and vanilla flavoring.
  2. Add margarine and beat together.
  3. Mix flour, baking powder, and salt; stir into egg mixture.
  4. Add chopped pecans and optional raisins.
  5. Pour batter into three greased and floured pans.
  6. Bake at 375°F for 30 minutes or until the center springs back at light touch.
  7. Cool for 10 minutes.
  8. Loosen edges with a knife.
  9. Turn out into racks and let cool completely.
