Cucumber Seafood Plate

A fresh and light seafood platter featuring chilled cucumber, cantaloupe, shrimp, and tuna, dressed with Italian dressing and lemon, perfect for a summer appetizer or light lunch.

Ingredients

  • 3/4 cup frozen peas
  • 1 small cantaloupe
  • 1 small cucumber
  • 1/3 cup Italian salad dressing
  • 2 tablespoons lemon juice
  • 1 teaspoon sugar
  • bibb lettuce leaves
  • 1 (7 oz) can solid white tuna
  • 6 oz cooked, shelled shrimp

Instructions

  1. Run cold water over peas to thaw.
  2. Halve the cantaloupe crosswise to remove and discard seeds.
  3. Cut the cantaloupe into 9 thin slices.
  4. Halve the cucumber lengthwise.
  5. Scoop out and discard cucumber seeds.
  6. Thinly slice the cucumber.
  7. Arrange bibb lettuce leaves on a serving platter.
  8. Place the sliced cantaloupe, cucumber slices, drained tuna, and cooked shrimp on the lettuce.
  9. In a small bowl, mix Italian salad dressing, lemon juice, and sugar.
  10. Drizzle the dressing over the seafood and fruit before serving.
