Cucumber Seafood Plate
A fresh and light seafood platter featuring chilled cucumber, cantaloupe, shrimp, and tuna, dressed with Italian dressing and lemon, perfect for a summer appetizer or light lunch.

Instructions
- Run cold water over peas to thaw.
- Halve the cantaloupe crosswise to remove and discard seeds.
- Cut the cantaloupe into 9 thin slices.
- Halve the cucumber lengthwise.
- Scoop out and discard cucumber seeds.
- Thinly slice the cucumber.
- Arrange bibb lettuce leaves on a serving platter.
- Place the sliced cantaloupe, cucumber slices, drained tuna, and cooked shrimp on the lettuce.
- In a small bowl, mix Italian salad dressing, lemon juice, and sugar.
- Drizzle the dressing over the seafood and fruit before serving.
