Ingredients

  • 1/4 cup lemon juice
  • 1 tablespoon melted butter or margarine
  • 2 tablespoons olive oil
  • 2 tablespoons parsley
  • 2 tablespoons sesame seed
  • 1 tablespoon Tabasco pepper sauce
  • 1/2 teaspoon ground ginger

Instructions

  1. In a shallow dish, mix lemon juice, melted butter, olive oil, parsley, sesame seed, Tabasco pepper sauce, ground ginger, and salt.
  2. Pierce the skin of each brook trout with a fork.
  3. Coat the fish inside and out with the marinade.
  4. Cover and refrigerate for 30 minutes to 1 hour.
  5. Place the fish on a handheld grill; brush with marinade.
  6. Cook about 4 inches from hot coals for 5 minutes.
  7. Turn the fish and brush with marinade again.
  8. Cook for 5 minutes longer or until the fish flakes easily with a fork.
