Cucumber Yogurt Spread

A refreshing cucumber and yogurt spread with a hint of garlic and lemon, perfect for dipping, spreading, or as a cool side dish for light meals.

Ingredients

  • 1 cucumber, pared and cubed
  • 1 tsp. salt
  • 3/4 c. plain yogurt
  • 1/2 c. dairy sour cream
  • 1 small clove garlic, crushed
  • 2 tsp. grated onion
  • 1/2 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Place cucumber in colander; sprinkle with 1 teaspoon salt. Let stand 10 minutes.
  2. Rinse with cold water, drain on paper towels.
  3. Place cucumber in blender or food processor and blend on high speed until pureed, about 2 minutes.
  4. Place puree in colander and let stand 5 minutes.
  5. In a bowl, combine yogurt, sour cream, crushed garlic, grated onion, lemon juice, salt, and pepper.
  6. Stir in the drained cucumber puree until well blended.
  7. Serve chilled as a spread or dip.
