  • 1/4 c. olive oil

Instructions

  1. Beat eggs; add spinach, chopped onion, chopped leek, pepper, baking powder, crumbled feta cheese, cottage cheese, melted butter, and olive oil.
  2. Mix thoroughly with a tablespoon until well combined.
  3. Brush a 13 x 9-inch baking pan with melted butter.
  4. Layer 6 sheets of filo dough in the pan, brushing each sheet with melted butter before adding the next.
  5. Spread 1/2 cup of the spinach mixture over the layered sheets.
  6. Place one sheet of filo over the mixture, then repeat layering with remaining sheets, alternating with the spinach mixture until all is used.
  7. Cover the top with the remaining 6 sheets of filo, brushing each sheet with melted butter.
  8. Bake at 350°F (175°C) for 45 minutes or until lightly browned.
  9. Allow to cool for 10 minutes before cutting into squares.
  10. Serve warm or at room temperature. Can be frozen for later use.
