- In a 10-inch skillet over medium-high heat, cook ground beef, diced onion, halved garlic clove, and curry powder until meat is browned and onion is tender, about 10 minutes, stirring frequently; discard garlic.
- Add diced zucchini, water, salt, sugar, and pepper; heat to boiling.
- Reduce heat to low; cover and simmer for 15 minutes or until zucchini is tender, stirring occasionally.
- Stir in diced tomato; heat through.
- Serve the beef mixture inside pita pockets.
