Ingredients

  • 1 lb. ground beef
  • 1 medium onion, diced
  • 1 garlic clove, halved
  • 1 Tbsp. curry powder
  • 1 medium zucchini, diced
  • 1/2 cup water
  • 1 1/4 tsp. salt
  • 1/2 tsp. sugar
  • 1/4 tsp. pepper
  • 1 medium tomato, diced
  • 1 (9 oz.) pkg. sandwich pockets (pita bread)

Instructions

  1. In a 10-inch skillet over medium-high heat, cook ground beef, diced onion, halved garlic clove, and curry powder until meat is browned and onion is tender, about 10 minutes, stirring frequently; discard garlic.
  2. Add diced zucchini, water, salt, sugar, and pepper; heat to boiling.
  3. Reduce heat to low; cover and simmer for 15 minutes or until zucchini is tender, stirring occasionally.
  4. Stir in diced tomato; heat through.
  5. Serve the beef mixture inside pita pockets.
