Ingredients

  • 1 spaghetti squash
  • 2 Tbsp vegetable oil
  • 1 large onion
  • 2 cloves garlic
  • 1 lb ground beef
  • 1 tsp salt
  • 1/2 tsp thyme
  • 1/2 tsp pepper
  • 3 large tomatoes
  • 2 Tbsp chopped parsley
  • 1/2 lb fresh mushrooms

Instructions

  1. Boil the spaghetti squash until tender; then place on a platter.
  2. Saute chopped onion and garlic in vegetable oil until tender.
  3. Add ground beef, salt, thyme, and pepper; cook until beef is browned and cooked through.
  4. Stir in chopped tomatoes, sliced mushrooms, and chopped parsley; cook for a few more minutes to combine flavors.
  5. Pour the sauce over the cooked spaghetti squash and serve.
