Ingredients

  • 1 c. chopped onion
  • 1 Tbsp. butter
  • 2 to 3 tsp. curry powder
  • 1 c. chopped tomato
  • 1 c. whipping cream
  • 2 skinless chicken breasts
  • 1 can creamed yellow corn
  • 1 can chicken broth

Instructions

  1. Cook chopped onion in butter over low heat until tender.
  2. Add curry powder and cook for 1 minute, stirring constantly.
  3. Stir in chopped cooked chicken, creamed yellow corn, chopped tomato, chicken broth, and whipping cream.
  4. Bring the mixture to a boil.
  5. Reduce heat and simmer for 5 to 10 minutes, stirring often.
