Ingredients

  • 1/4 cup butter, melted
  • 1/2 teaspoon salt
  • 1/4 cup onion, minced
  • 1/2 cup celery, chopped
  • 1 teaspoon poultry seasoning
  • 1/4 cup chicken stock or water
  • 2 cups dry bread crumbs
  • Cornish hens

Instructions

  1. Mix melted butter, salt, minced onion, chopped celery, poultry seasoning, and chicken stock or water in a bowl to prepare the stuffing.
  2. Stuff the mixture into the Cornish hens.
  3. Brush the hens with melted butter and season to taste.
  4. Roast at 350°F for approximately 1 1/2 hours.
  5. During roasting, add water if needed to keep moist.
  6. Baste the hens often during cooking.
  7. Raise oven temperature to 400°F for the last 10 minutes of roasting.
  8. Garnish may be added on the serving platter for color.
