Curried Mushrooms

Creamy and flavorful, curried mushrooms combine tender mushrooms with aromatic curry and onions, perfect for a quick vegetarian main or side dish with rich, savory notes.

Ingredients

  • 1/4 cup butter or margarine
  • 1/2 pound mushrooms, quartered
  • 3/4 cup finely chopped onion
  • 1 clove garlic, crushed
  • 1 teaspoon curry powder
  • 1/3 cup beef broth

Instructions

  1. Saute the mushrooms and onion in the butter or margarine for about 5 minutes.
  2. Add the garlic and curry powder and cook 2 minutes longer or until curry is darkened.
  3. Stir in the beef broth and simmer over low heat for 8 to 10 minutes.
  4. Serve over rice.
