Ingredients

  • 1 small onion, chopped
  • 1 1/2 cups water
  • 1 (10 1/2 oz.) can beef broth, undiluted
  • 1 cup uncooked regular rice
  • 3/4 teaspoon curry powder
  • 1/8 teaspoon garlic powder
  • 1 (8 oz.) can unsweetened pineapple chunks, drained

Instructions

  1. Combine water, beef broth, and onion in a medium saucepan; bring to a boil.
  2. Stir in rice, curry powder, and garlic powder.
  3. Cover, reduce heat, and simmer for 20 to 25 minutes.
  4. Add pineapple chunks to the rice and cook for an additional 5 minutes or until rice is tender and water is absorbed.
