A savory Philippine-style roast beef marinated in tomato sauce, soy, vinegar, and spices, resulting in tender, flavorful meat perfect for family dinners or special occasions.

Ingredients

  • 2 1/2 lb. boneless whole piece beef
  • 1 (8 oz.) can tomato sauce
  • 1/4 c. onions, sliced
  • 2 Tbsp. vinegar
  • 1 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/4 c. soy sauce
  • 3 cloves garlic
  • 2 Tbsp. wine or cooking sherry
  • 1/2 tsp. pepper
  • 2 bay leaves

Instructions

  1. Mix all ingredients in a pot, then marinate beef in the mixture. Cover and simmer for 30 minutes.
  2. Add a cup of water and continue to simmer, covered, for 1 1/2 hours or until the meat is tender.
  3. Taste and adjust seasoning if needed.
  4. Slice crosswise against the fibers when serving.
