Ingredients

  • 24 medium cucumbers, cut in 1-inch chunks
  • 1/2 cup salt
  • 8 cups water
  • 1 teaspoon curry powder
  • 2 cups vinegar
  • 2 1/2 cups sugar
  • 1/2 cup mustard seed

Instructions

  1. Wash and drain the cucumbers.
  2. Combine the salt and water.
  3. Pour the salt water over the cucumbers and let stand for 5 hours.
  4. Drain the cucumbers and rinse thoroughly.
  5. Combine the remaining ingredients: curry powder, vinegar, sugar, and mustard seed.
  6. Add the cucumbers to the mixture.
  7. Heat until boiling.
  8. Pack the hot pickles into sterilized pint jars.
  9. Process the jars in a boiling water bath for 20 minutes.
