Dad'S Catfish Stew

Ingredients

  • 1 lb. onions, chopped
  • 1 stick butter or margarine
  • 1 pt. milk
  • 1 small can tomato sauce
  • 2 lb. catfish, deboned and skinned
  • fatback

Instructions

  1. Fry enough fatback to make 1/2 cup of grease.
  2. Add the fatback grease to 2 gallons of water in a large soup pot.
  3. Add the deboned and skinned catfish to the water and cook until done.
  4. Debone the fish if not done before cooking.
  5. Add the fish, chopped onions, butter or margarine, milk, and tomato sauce to the fish stock.
  6. Bring the mixture to a boil.
  7. Cook slowly for about 1 1/2 hours, then serve.
