Ingredients

  • 1 cup flour
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 2 eggs
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F.
  2. Mix flour, powdered sugar, and salt; cut in butter until crumbly.
  3. Press mixture into an ungreased 8x8-inch pan, building up 1/2-inch edges.
  4. Bake for 20 minutes.
  5. In a bowl, beat eggs, sugar, lemon juice, and baking powder until light and fluffy, about 3 minutes.
  6. Pour lemon filling over the hot crust.
  7. Bake until no indentations remain when touched lightly in the center, about 25 minutes.
  8. Cool completely; cut into 1 1/2-inch squares.
  9. Dust with sifted powdered sugar before serving.
