Ingredients

  • 1 c. sugar
  • 2 eggs
  • 2 Tbsp. vinegar
  • 2 Tbsp. cornstarch
  • 1 c. water
  • 1 small lump butter
  • 1/2 tsp. lemon extract
  • 1 baked 9-inch pie shell
  • whipped cream

Instructions

  1. In the top of a double boiler, combine sugar, eggs, vinegar, cornstarch, and water.
  2. Cook over hot water until the mixture is thick and smooth, stirring occasionally.
  3. Just before removing from heat, stir in the butter and lemon extract.
  4. Pour the filling into the baked pie shell.
  5. Cool the pie and serve with whipped cream, or plain.
