Dakota Buffalo Pie
Ingredients
- 2 lb. meat, cut into 1-inch cubes ⓘ
- 2 tsp. salt ⓘ
- 1/2 tsp. ground pepper ⓘ
- 1 tsp. sage ⓘ
- 1/3 c. flour ⓘ
- 1/4 c. oil ⓘ
- 1 large onion ⓘ
- 1 medium carrot ⓘ
- pastry for single 9-inch crust ⓘ
- 1 stalk celery ⓘ
- 1 large potato, cubed ⓘ
- 1/4 c. tomato puree ⓘ
- 1 c. water ⓘ
- 1 bay leaf ⓘ
- 3 sprigs parsley ⓘ
- 1 whole clove
- 1/2 tsp. thyme ⓘ
Instructions
- Season the meat cubes with salt, pepper and sage; dredge in 1/4 cup of flour.
- Heat oil in a large skillet; brown the meat on all sides.
- Using a slotted spoon, transfer meat to a heavy Dutch oven.
- In the remaining oil in the skillet, saute onion, carrot, celery and potato until lightly browned.
- Add vegetables to meat in Dutch oven.
- Sprinkle remaining flour over drippings in skillet and cook, stirring, until lightly browned.
- Stir in the broth, tomato puree, water, garlic, bay leaf, parsley, clove and thyme. Pour over meat and vegetables.
