Danish Abelskivers are fluffy, spherical pancakes with a tender interior and crispy exterior, perfect for brunch or a sweet breakfast treat enjoyed by all ages.

Ingredients

  • 2 to 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons margarine or butter
  • 2 cups buttermilk
  • 3 egg yolks
  • 3 egg whites

Instructions

  1. In a large mixing bowl, combine flour, baking soda, sugar, baking powder, and salt; mix well.
  2. Add margarine or butter, buttermilk, and egg yolks; mix until smooth.
  3. Fold in the beaten egg whites until fully incorporated.
  4. Heat Abelskivers pan until a drop of water sizzles in it.
  5. Put 1/2 teaspoon melted butter in each cup of the pan.
  6. Fill each compartment halfway with batter.
  7. Cook until lightly brown on the bottom.
  8. Turn the dough once using skewers or a fork, and cook the other side until golden.
  9. Serve warm with maple syrup, butter, powdered sugar, or jelly.
