Danish Abelskivers are fluffy, spherical pancakes with a tender interior and crispy exterior, perfect for brunch or a sweet breakfast treat enjoyed by all ages.

- In a large mixing bowl, combine flour, baking soda, sugar, baking powder, and salt; mix well.
- Add margarine or butter, buttermilk, and egg yolks; mix until smooth.
- Fold in the beaten egg whites until fully incorporated.
- Heat Abelskivers pan until a drop of water sizzles in it.
- Put 1/2 teaspoon melted butter in each cup of the pan.
- Fill each compartment halfway with batter.
- Cook until lightly brown on the bottom.
- Turn the dough once using skewers or a fork, and cook the other side until golden.
- Serve warm with maple syrup, butter, powdered sugar, or jelly.
