Ingredients

  • 1 c. raspberries
  • 2 c. strawberries
  • 1 c. plus 3 Tbsp. cold water
  • 3 Tbsp. cornstarch
  • 1/4 c. honey or sugar

Instructions

  1. Combine raspberries and strawberries in a food processor or blender and blend until pureed.
  2. Strain the berry mixture to remove the seeds.
  3. Combine the strained berries with 1 cup of water in a medium‑size saucepan.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and reaches a pudding consistency.
  5. Remove from heat, stir in cornstarch slurry and honey or sugar, then chill before serving.
