Dark Nut Date Bread

Ingredients

  • 1 1/2 c. chopped dates
  • 1 1/2 c. hot strong coffee
  • 1 Tbsp. butter
  • 1/2 tsp. salt
  • 1 1/4 c. sugar
  • 2 eggs, well beaten
  • 2 3/4 c. flour
  • 1 tsp. baking soda
  • 1 c. chopped nuts
  • 1 tsp. vanilla

Instructions

  1. Add butter and salt to hot coffee and soak dates; let cool. Add sugar, eggs, flour, soda, vanilla and nuts.
  2. Pour into two 9 x 4 1/4 x 3-inch loaf pans which have been greased and lined with wax paper.
  3. Bake in a preheated 350° oven for 1 1/4 hours.
