Ingredients

  • 1 cup chopped dates
  • 8 ounces maraschino cherries drained and cut in half
  • 1/2 cup cherry juice
  • 1/2 cup boiling water
  • 1 teaspoon baking soda
  • 1 cup brown sugar
  • 2 1/2 tablespoons shortening
  • 1 egg

Instructions

  1. Combine chopped dates, drained and halved maraschino cherries, cherry juice mixed with boiling water, and baking soda. Set aside.
  2. Cream together brown sugar, shortening, egg, and vanilla until light and fluffy.
  3. Add the flour and the date and cherry mixture alternately to the creamed mixture, mixing well after each addition.
  4. Line a loaf pan with waxed paper and pour the batter into it.
  5. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
