  • 8 oz. dried dates
  • 4 oz. coconut

  1. Beat egg whites, salt, and cream of tartar until soft peaks form.
  2. Beat in vanilla and sugar until very stiff and glossy.
  3. Fold in chopped dried dates and shredded coconut.
  4. Drop spoonfuls onto ungreased brown wrapping paper on a cookie sheet, spacing 2 inches apart.
  5. Bake in a 325°F oven for about 20 minutes or until lightly browned.
  6. Cool slightly.
  7. Remove from paper and serve.
