Ingredients

  • 1 Tbsp. butter
  • 3 eggs
  • 3 Tbsp. chopped watercress leaves
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 c. sour cream
  • 1 to 2 Tbsp. red or black caviar

Instructions

  1. Melt butter in an 8-inch omelette pan or skillet over moderate heat.
  2. Combine eggs, watercress, salt, and pepper; add to the pan.
  3. Cook, lifting the edges with a fork until the omelette is set.
  4. Fold the omelette in half and turn it out onto a serving plate.
  5. Top with sour cream and caviar before serving.
