Ingredients

  • 1 pkg. Duncan Hines Deluxe carrot cake mix
  • 8 oz. pitted dates, chopped
  • 1 c. boiling water
  • 1/2 c. margarine or butter
  • 1/2 c. chopped pecans

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour two 9-inch round layer pans.
  3. Prepare, bake, and cool the cake as directed on the package.
  4. For the filling and frosting, put dates, boiling water, margarine or butter, into a heavy saucepan.
  5. Cook, stirring constantly, over medium heat until the mixture thickens, about 8 minutes.
  6. Remove from heat and stir in chopped pecans.
  7. Cool the date-nut mixture.
  8. Spread the cooled mixture between the cooled layers, on the sides, and on top of the cake.
  9. Chill the assembled cake before serving.
