Ingredients

  • 1 lb chopped dates
  • 1 lb chopped walnuts
  • 1 cup flour
  • 1 cup sugar
  • 4 eggs
  • whipped cream or whipped cream cheese (for topping)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a large bowl, mix chopped dates, chopped walnuts, flour, and sugar.
  3. In a small bowl, beat eggs at high speed for 5 minutes or until thick and lemon-colored.
  4. Stir the beaten eggs into the date mixture; batter will be very thick.
  5. Spread the batter evenly in a well-buttered 13 x 9 x 2-inch baking pan.
  6. Bake for 30 to 35 minutes until a wooden toothpick inserted in the center comes out clean.
  7. Allow to cool, then cut into squares and top with whipped cream or whipped cream cheese if desired.
