Date Refrigerator Candy

Ingredients

  • 2 c. white sugar
  • 1 c. milk
  • 1/4 c. butter or oleo
  • 1/2 lb. chopped dates
  • 1 c. chopped nuts (pecans, walnuts)
  • 1 c. moist coconut

Instructions

  1. Combine sugar, milk and butter in a heavy saucepan.
  2. Cook until syrup forms a soft ball in water. Add chopped dates.
  3. Cook over low heat, stirring often, until candy becomes very thick. The bubbles will pop and hiss and the mixture will follow the spoon around the pan.
  4. Take from fire and add nuts and coconut. Beat until mixture is like soft cookie dough and can be handled. Turn out on a cloth which has been dipped in cold water. Roll to form a 1 1/2-inch cylinder.
  5. Keep refrigerated until ready to use.
