Ingredients

  • 1 cup sugar
  • 2 eggs
  • 2/3 cup molasses
  • 1/3 cup shortening, melted
  • 1 (8 oz.) package chopped dates
  • 1 cup chopped raisins
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 (8 oz.) packages cream cheese, softened

Instructions

  1. Combine sugar and eggs in a large mixing bowl; beat at medium speed until well blended.
  2. Add molasses and melted shortening, beating well.
  3. Sift together flour, baking soda, and salt; dredge chopped dates and raisins in 1/3 cup flour mixture.
  4. Alternate adding the flour mixture and buttermilk to the molasses mixture, beginning and ending with flour mixture, beating well after each addition.
  5. Fold in the reserved date-raisin mixture.
  6. Pour 1 cup of batter into each of 7 well-greased 10 3/4-ounce soup cans.
  7. Bake at 325°F (163°C) for 1 hour and 10 minutes, or until a wooden pick inserted in the center comes out clean.
  8. Cool 10 minutes in cans on wire racks.
  9. Remove loaves from cans and cool completely on wire racks.
  10. Cut each loaf into 12 slices.
  11. Spread cream cheese evenly over half of the date bread slices; top with remaining slices to make sandwiches.
  12. Cut each sandwich in half and arrange on a serving platter.
