Ingredients

  • 1 cup sifted flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 cups whole apricots
  • 1 cup candied cherries
  • 3 cups walnuts
  • 4 eggs
  • 1 teaspoon vanilla

Instructions

  1. Substitute 2 cups of whole apricots for the dates as instructed.
  2. Preheat oven and prepare a baking pan.
  3. Sift the flour, sugar, salt, and baking powder together.
  4. Chop the apricots, candied cherries, and walnuts if desired.
  5. In a large mixing bowl, beat the eggs and vanilla together.
  6. Gradually add the dry ingredients to the egg mixture, mixing well.
  7. Fold in the chopped apricots, candied cherries, and walnuts.
  8. Pour the batter into the prepared baking pan.
  9. Bake in the preheated oven for approximately 60 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before serving.
