Ingredients

  • 2 lb. pork, cubed
  • 2 Tbsp. vinegar
  • 1 c. onion
  • 3 Tbsp. chopped garlic
  • 1/2 c. chopped tomato
  • 1 tsp. parsley flakes
  • 1 tsp. thyme
  • 1/2 c. chopped celery
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1/2 c. cooking oil
  • 3 c. hot water

Instructions

  1. Wash the pork in vinegar and water.
  2. Put all ingredients in a bowl and cover.
  3. Allow to sit for 45 minutes to 1 hour for seasoning to penetrate the meat.
  4. Remove the seasoning.
  5. In a pot, add cooking oil and brown the pork cubes.
  6. Add the seasoning back to the pot.
  7. Brown the meat for about 30 minutes.
  8. Add hot water and simmer until the pork is tender.
  9. Ensure the meat does not dry out during cooking.
  10. Simmer until a gravy forms.
