Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 teaspoon maple or vanilla extract
  • 3/4 cup oil
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans
  • 1 cup mashed bananas

Instructions

  1. Mix all ingredients together in a bowl.
  2. Pour the batter into a greased 9 x 5 inch loaf pan.
  3. Bake at 350°F for 1 hour.
  4. Test the bread with a toothpick for doneness.
  5. Let the bread set for 10 minutes before removing from the pan.
