Ingredients

  • 2 lb. rockfish fillets
  • 1/4 c. margarine
  • 3 cloves garlic
  • 3/4 tsp. lemon pepper
  • 1/2 tsp. oregano
  • 1/2 tsp. salt
  • 1/2 c. vermouth
  • 1/2 c. fresh parsley

Instructions

  1. Preheat electric skillet or frying pan to medium heat.
  2. Melt margarine in the pan, then add crushed garlic, lemon pepper, oregano, and salt; sauté for 5 minutes.
  3. Add rockfish fillets to the pan.
  4. Increase heat to medium-high and cook until the fish is halfway done. Add vermouth.
  5. Turn the fish fillets over.
  6. Continue cooking until the fish is fully cooked.
  7. Stir in chopped parsley and serve.
