Deep Dish Chili Pie

- In a Dutch oven, brown ground beef in vegetable oil; drain excess fat.
- Add stewed tomatoes, bell pepper, taco spices, seasonings, and yellow cornmeal to the beef mixture. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
- Add kidney beans to the chili mixture and stir well.
- Unfold one refrigerator pie crust and fit it into a 10-inch pie plate.
- Pour the chili mixture into the pie crust and sprinkle with 1/4 cup of cheddar cheese.
- Cover with the second pie crust and flute the edges to seal.
- Bake uncovered in a 350°F (175°C) oven for 30 minutes.
- Sprinkle remaining cheese over the crust, return to the oven, and bake for an additional 10 minutes until cheese is melted and crust is golden.
