Ingredients

  • 10 to 12 peaches, pared and sliced
  • 1/4 tsp. almond extract
  • 1/3 cup brown sugar, firmly packed
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 2/3 cup granulated sugar
  • 1/8 tsp. salt
  • 2 tablespoons flour

Instructions

  1. Combine peaches, lemon juice, almond extract, sugar, and salt in a bowl. Mix thoroughly and let stand while preparing the pastry.
  2. Roll out the pastry and fit it into a deep dish pie pan.
  3. Pour the peach filling into the prepared crust.
  4. Cut butter into small pieces and dot over the filling.
  5. Sprinkle brown sugar and flour evenly over the peaches.
  6. Cover with a top crust or lattice if desired, seal edges.
  7. Bake in a preheated oven at 375°F (190°C) for about 45 minutes or until the crust is golden brown.
  8. Let cool slightly before serving.
