- In a separate bowl, mix the flour, ground cumin, onion salt, cayenne pepper, milk, water, and peanut oil to make the batter.
- Fold the beaten egg whites into the batter.
- Dip the eggplant slices into the batter, ensuring they are well coated.
- Deep fry the coated eggplant slices at 375°F (190°C) for 2 to 3 minutes until golden brown.
- Drain on paper towels and serve hot.
