Ingredients

  • 1 medium eggplant (about 1 lb.)
  • 1/2 tsp. salt
  • 1 egg white
  • 1 c. flour
  • 1/3 cup water
  • 2 Tbsp. peanut oil
  • 1 tsp. ground cumin
  • 1 tsp. onion salt

Instructions

  1. Pare the eggplant; cut in half lengthwise and then into 1/2-inch wide slices.
  2. Sprinkle the eggplant slices with salt and set aside for 15 minutes.
  3. Beat the egg whites until stiff.
  4. In a separate bowl, mix the flour, ground cumin, onion salt, cayenne pepper, milk, water, and peanut oil to make the batter.
  5. Fold the beaten egg whites into the batter.
  6. Dip the eggplant slices into the batter, ensuring they are well coated.
  7. Deep fry the coated eggplant slices at 375°F (190°C) for 2 to 3 minutes until golden brown.
  8. Drain on paper towels and serve hot.
