Ingredients

  • 12-15 medium okra
  • 2 cups packaged hush puppy mix
  • 2/3 cup self-rising flour
  • 1/2 tablespoon sugar

Instructions

  1. Wash the okra and slice into 1/4 inch wheels.
  2. Salt the sliced okra well, then sprinkle about 1/2 cup of hush puppy mix over it to coat.
  3. Place the okra in a colander and run cold water over it to wet.
  4. Mix the remaining hush puppy mix with self-rising flour and sugar in a large bowl with a tight-fitting lid.
  5. Take the okra from the colander, place into the mixture, cover, and shake until the okra is completely coated.
  6. Shake off excess mixture from the okra.
  7. Heat oil until hot, then fry the coated okra until golden brown.
