- Wash the okra and slice into 1/4 inch wheels.
- Salt the sliced okra well, then sprinkle about 1/2 cup of hush puppy mix over it to coat.
- Place the okra in a colander and run cold water over it to wet.
- Mix the remaining hush puppy mix with self-rising flour and sugar in a large bowl with a tight-fitting lid.
- Take the okra from the colander, place into the mixture, cover, and shake until the okra is completely coated.
- Shake off excess mixture from the okra.
- Heat oil until hot, then fry the coated okra until golden brown.
