Crunchy deep-fried chicken coated with chopped walnuts, served with gingered plum sauce, perfect as an appetizer or party snack with rich flavors and satisfying texture.

Ingredients

  • 4 boneless chicken breast halves (about 1 1/4 lb.)
  • 1 Tbsp. sherry
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 egg whites
  • 1/4 cup cornstarch
  • 2 to 2 1/2 cups finely chopped walnuts
  • vegetable oil
  • gingered plum sauce

Instructions

  1. Cut chicken into bite-size pieces and sprinkle with sherry, salt, and pepper. Set aside.
  2. Beat egg whites at high speed until foamy.
  3. Gradually add cornstarch to egg whites, beating until stiff peaks form.
  4. Gently fold in the chicken pieces.
  5. Roll each chicken piece in finely chopped walnuts.
  6. Fry the coated chicken in 2 inches of hot oil (350°F) until golden brown.
  7. Drain on paper towels.
  8. Serve the chicken with gingered plum sauce.
