  1. Heat 1/2-inch cooking oil to 375°F in a frying pan.
  2. Remove the head and tail of the trout.
  3. Cut down the backbone, dividing the trout into two pieces.
  4. Wash and dry both pieces thoroughly.
  5. Season the trout with salt and pepper.
  6. Put the trout in the oil skin side down and cook for 5 minutes.
  7. Turn the trout over and fry until golden brown, about 10 minutes.
  8. Season to taste.
  9. Remove the fish from the oil and drain on toweling.
  10. Serve with tartar sauce or ketchup and horseradish mixture.
