Ingredients

  • 2 cakes yeast
  • 1/2 cup warm water
  • 1 teaspoon sugar
  • 1/2 cup honey
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup molasses or sorghum
  • 1/2 cup shortening
  • 4 cups warm water
  • 4 to 6 cups white flour

Instructions

  1. Dissolve the yeast in lukewarm water with the sugar and let stand until thoroughly dissolved.
  2. Add syrup, honey, brown sugar, molasses, rye flour, shortening, and salt to a large mixing bowl.
  3. Pour in warm water and stir until well mixed.
  4. Add enough white flour to make a soft dough.
  5. Pour the dough onto a pastry sheet and knead until the dough is still sticky when touched, but not too stiff.
  6. Place the kneaded dough in a large greased mixing bowl and cover.
  7. Let it rise in a warm place until doubled in size.
  8. Divide the dough into 5 or 6 balls, shaping each into a round loaf.
  9. Let the shaped dough stand for 10 minutes.
  10. Shape into loaves and place in well-greased pans.
  11. Let the loaves rise in a warm place until doubled in bulk.
  12. Bake at 350°F (175°C) for 45 minutes.
  13. Remove from pans and cool on cake racks.
  14. This recipe makes 5 or 6 loaves, depending on size of pans.
