Instructions

  1. Wash cucumbers and cut into approximately 3-inch long spears.
  2. Cut tomatoes and onions into wedges.
  3. Slice jalapeno peppers in half; leave seeds for extra heat or remove seeds for milder flavor.
  4. Peel garlic cloves and leave whole.
  5. Pack jars with cucumber spears around the edges, and place tomatoes, garlic, and peppers in the center.
  6. Add 1 teaspoon of salt per jar.
  7. Bring vinegar, water, and sugar to a boil.
  8. Pour the hot vinegar mixture over the packed jars.
  9. Seal the jars with lids.
  10. Place jars in an open kettle, cover with hot water, and boil for 10 minutes.
  11. Remove jars and let cool before storing.
