Ingredients

  • 3 eggs
  • 2 1/4 cups sugar
  • 1 cup vegetable oil
  • 3 teaspoons vanilla
  • 3 cups flour
  • 3 teaspoons cinnamon
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups uncooked shredded zucchini
  • 1 cup chopped nuts

Instructions

  1. Cream eggs and sugar until fluffy.
  2. Beat in oil and vanilla.
  3. Sift dry ingredients together.
  4. Add shredded zucchini and chopped nuts to the dry ingredients.
  5. Combine the wet and dry ingredients until well mixed.
