Ingredients

  • 1 cup flour
  • 12 cup margarine, softened
  • 3 tablespoons powdered sugar
  • 2 large eggs, slightly beaten
  • 1 cup sugar
  • 14 cup flour
  • 12 teaspoon salt
  • 12 teaspoon baking powder
  • 1 teaspoon vanilla
  • 12 cup coconut
  • 34 cup chopped nuts

Instructions

  1. Mix pastry ingredients with fingers until smooth.
  2. Pat into an 8- or 9-inch pan.
  3. Bake at 350F for 10 minutes.
  4. While pastry is baking, combine the filling ingredients.
  5. Spread over partially baked pastry.
  6. Return pan to oven, and bake for another 25 minutes or until center is set.
  7. Cool; cut into squares.
  8. *NOTE: Recipe can be easily doubled & baked in a 9 x 13 pan.
