  • 1 cup sugar
  • 4 eggs
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 (16 oz.) can chocolate syrup
  • 1 cup chopped pecans
  • 1/2 teaspoon almond extract
  • 1/4 c. butter or margarine, softened
  • 2 c. powdered sugar, sifted
  • 2 1/2 Tbsp. green creme de menthe

Instructions

  1. Cream 1/2 cup butter; gradually add sugar, beating well at medium speed of an electric mixer.
  2. Add eggs, one at a time, beating after each addition.
  3. Combine flour and salt; add to creamed mixture alternately with chocolate syrup, beginning and ending with flour mixture.
  4. Stir in pecans and almond extract.

Tips & Substitutions

For a fudgier texture, try using dark chocolate syrup instead of regular. You can substitute chopped walnuts for pecans if you prefer a different nut. Make sure to sift the powdered sugar for the frosting to avoid lumps. If you're short on almond extract, a splash of vanilla will work in a pinch.

Serving Suggestions

Serve these Derby Brownies warm with a drizzle of chocolate sauce or a dollop of whipped cream. They pair wonderfully with a cold Banana Milkshake(Low-Fat, Lo-Cal, Low Cholesterol) for a classic dessert combo. For a festive touch, sprinkle some colorful sprinkles on top or serve with fresh berries on the side.

Storage & Reheating

Store leftover brownies in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate them for up to a week. To reheat, microwave individual servings for about 10 seconds, or enjoy them cold for a denser texture. Pair with a scoop of ice cream for a delicious treat.

Frequently Asked Questions

Can I use a different type of nut in this recipe?

Absolutely! While chopped pecans are traditional, you can easily substitute them with walnuts or almonds for a different flavor and texture. Just ensure the nuts are chopped to similar sizes for even distribution in the brownies.

How can I make these brownies more chocolatey?

To enhance the chocolate flavor, consider adding some chocolate chips to the batter before baking. You can also mix in cocoa powder for a richer taste. Just be mindful of the balance of dry ingredients if you add more cocoa.

What can I use instead of almond extract?

If you don't have almond extract on hand, vanilla extract is a great alternative. It will slightly change the flavor profile but will still complement the chocolate well. You can even try using hazelnut extract for a unique twist!
