Ingredients

  • 2 Tbsp. seasoned breadcrumbs
  • 4 chicken cutlets
  • 1 Tbsp. olive oil
  • 1/2 c. white wine
  • 1/4 tsp. salt
  • 1/4 tsp. fresh ground pepper
  • 1 c. mushrooms, quartered
  • 1 Tbsp. lemon juice
  • 1 Tbsp. honey mustard

Instructions

  1. Place breadcrumbs and chicken in a plastic bag and shake to coat.
  2. Heat olive oil in a nonstick skillet over medium heat and add chicken.
  3. Cook the chicken for 3 minutes on each side until browned.
  4. Add white wine, salt, pepper, and quartered mushrooms to the skillet.
  5. Cover, reduce heat, and cook for 15 minutes.
  6. Remove the chicken and mushrooms with a slotted spoon and set aside.
  7. Add lemon juice and honey mustard to the skillet and stir. Cook for 2 minutes.
  8. Pour the sauce over the chicken and serve.
