- Place breadcrumbs and chicken in a plastic bag and shake to coat.
- Heat olive oil in a nonstick skillet over medium heat and add chicken.

- Cover, reduce heat, and cook for 15 minutes.
- Remove the chicken and mushrooms with a slotted spoon and set aside.
- Add lemon juice and honey mustard to the skillet and stir. Cook for 2 minutes.
- Pour the sauce over the chicken and serve.
