Ingredients

  • 4 boiled eggs
  • 1 Tbsp mustard
  • 1/2 c sour cream
  • 3 medium potatoes, cooked, peeled and cubed
  • salt and pepper to taste
  • 1/4 c chopped onion
  • 2 Tbsp vinegar
  • 1/2 c mayonnaise
  • 1/4 tsp celery seed
  • 1/2 c chopped celery

Instructions

  1. Cut the boiled eggs in half and remove the yolks.
  2. Mash the yolks and mix with vinegar and mustard.
  3. Add mayonnaise, sour cream, and celery seed to the yolk mixture; mix well.
  4. Chop the egg whites and combine with cooked, peeled, and cubed potatoes, chopped celery, and chopped onion.
  5. Fold in the egg yolk mixture until evenly incorporated.
