Diabetic Cherry Salad

A refreshing, diabetes-friendly cherry salad featuring sugar-free Jell-O, cherry pie filling, pineapple, and diet Coke, perfect for a light, fruity dessert suitable for diabetics.

Ingredients

  • 2 small packages sugar-free cherry Jell-O
  • 2 cups boiling water
  • 1 cup caffeine-free diet Coke
  • 4 packets Equal
  • 1/2 cup water
  • 1 (20 oz.) can crushed pineapple in its own juice
  • 1 (20 oz.) can no sugar added cherry pie filling or reduced sugar cherry pie filling

Instructions

  1. Dissolve the sugar-free cherry Jell-O in boiling water.
  2. Add the caffeine-free diet Coke to the dissolved Jell-O.
  3. Place the mixture in the refrigerator for approximately 45 minutes to 1 hour to slightly thicken.
  4. Dissolve the Equal packets in 1/2 cup water and fold into the gelatin mixture.
  5. Add the crushed pineapple, cherry pie filling, and nuts (if desired) into the gelatin mixture and fold gently.
  6. Return the mixture to the refrigerator until it is firmly set.
  7. Serve chilled and enjoy.
