Ingredients

  • 10 c. shredded squash
  • 2 c. onions
  • 2 Tbsp. salt
  • 2 c. vinegar
  • 1 c. chopped bell pepper
  • 1 jar pimento
  • 2 pods hot pepper
  • 3 c. sugar
  • 1 Tbsp. mustard seed
  • celery seed
  • turmeric

Instructions

  1. Mix shredded squash and onions with salt.
  2. Let stand for 1 hour.
  3. Drain the mixture.
  4. Mix vinegar, sugar, chopped bell pepper, pimento, hot pepper, mustard seed, celery seed, and turmeric.
  5. Let this mixture stand for 1 hour.
  6. Drain the mixture.
  7. Combine drained squash and onion mixture with the remaining ingredients, except pimento.
  8. Bring to a boil.
  9. Add the squash and onion mixture back in and bring to a second boil.
  10. Add pimento.
  11. Place the relish in jars and seal.
