Ingredients

  • unflavored gelatin
  • lemon juice
  • lemon rind
  • cold water
  • egg white
  • egg yolk
  • Sweet 'N Low
  • salt

Instructions

  1. Combine egg yolks, Sweet 'N Low, salt, lemon juice, and lemon rind in the top of a double boiler and cook for about 5 minutes.
  2. Soften the unflavored gelatin in cold water and then dissolve it into the hot lemon mixture.
  3. Allow the mixture to cool.
  4. Beat egg whites until stiff but not dry.
  5. Fold the beaten egg whites into the lemon mixture.
  6. Pour into a flaky crust and chill before serving.
