Ingredients

  • 2 cups Cheerios, crushed to 1 cup
  • 1 1/4 cups flour
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 cup applesauce
  • 1/3 cup milk
  • 1/2 cup raisins
  • 3 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 400°F (200°C). Grease the bottom only of muffin pan cups.
  2. Crush the Cheerios to make 1 cup of crushed cereal.
  3. In a mixing bowl, combine the crushed Cheerios, flour, brown sugar, cinnamon, baking powder, and baking soda.
  4. Add the applesauce, milk, vegetable oil, and raisins to the dry ingredients.
  5. Mix until just combined.
  6. Pour the batter into the prepared muffin cups.
  7. Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool slightly before removing from the pan.
