Diet Broccoli Casserole

Ingredients

  • 1 head broccoli, chopped and steamed
  • 1/2 c. onion, chopped
  • 1/2 c. mushrooms
  • 1/2 c. skim milk
  • 2 eggs or 1 carton Egg Beaters
  • 1 1/2 c. water
  • 1 1/2 c. Minute rice
  • 6 slices Kraft free cheese
  • salt to taste
  • pepper to taste

Instructions

  1. Mix everything together.
  2. Bake in a covered casserole, about 30 minutes at 350°.
  3. Don't overbake.
  4. Casserole can become mushy and unappetizing if overbaked.
